I was gonna skip today’s post, or put it off until tomorrow at least. Usually when I ‘put something off until tomorrow’ once, I keep doing it, day after day, until, after a while, it fades from the front of my mind and moves to the place where ideas go to die. It’s 9:46 PM right now and all I want to do is watch another episode or two of TV then go to bed. But instead, here I am, sticking to my word and practicing honoring my word. So, without further ado, let’s get into it.
How I make my avocado toast.
My recipe started off simple, with just a little cream cheese and some avocado mashed on top and maybe a sprinkle of salt to spruce it up. Over time I began experimenting with it. I tried new things. I added more seasonings. I tried new sauces. Somewhere along the lines it grew into something more than I ever imagined it could. Here’s how I make it.
First I take some prepackaged baby bella mushrooms out of the fridge and clean them in a strainer. I let the strainer sit for a couple minutes to drain out the excess liquid. While the mushrooms dry, I put a pan on the stove top, add a little oil, and set the heat to medium. I take advantage of the time it takes for the pan to heat up by throwing a couple slices of bread in the toaster, which I set to around 200 degrees.
By now the mushrooms have had a minute or two to dry off. I put them on the cutting board and dice them into thin cubes, then I throw them on the pan. Now it’s time to add some seasoning to the mushrooms. I salt them. Then pepper them. Then sprinkle some garlic and chipotle powder on them. Once the seasonings added I stir them around a bit to make sure the every piece gets coated.
Now we wait for a few minutes and let the mushrooms cook, making sure to stir them around a bit every minute or two. It’s also important to keep an eye on the toast, once the top sides start to brown a little bit I flip them over. Once the mushrooms are cooked enough I take them off the heat.
When both sides of the toast have just a little brown on them I take them out and put them on a plate. I spread some cream cheese on them. Then I add about a quarter of an avocado to each slice in thin strips, which I mash on the bread with a fork. Now I add a little more of the same seasonings I used for the mushrooms onto the toast, along with some red pepper flakes and everything but the bagel seasoning. It’s time to add the mushrooms, I try to get spread them out one layer high over each slice of toast.
Finally, it’s time to add my secret ingredients, a touch of habanero sauce and a little nutritional yeast. That’s it, that’s how I make my toast. The end.

Ok, I’ve made a trend out of finishing these posts with a new task, and it’s worked out so far, so I’m gonna stick to it. This post was really boring for me to write, and I definitely didn’t put much effort into it, but I at least got the whole idea down. That’s something I struggle with. I try to write something perfectly the first time, but I never get the complete thought down on paper (so to speak.) I need to work on being ok with the true writing process, which means writing a really shitty first draft that covers the important parts and highlights the main points, and then making it good afterwards. So for tomorrow’s task, I’ll edit this poorly written post and try to make it at least a little bit more interesting and easy to read.
